How to Reduce Table Turn Time in Your Restaurant
Table turn time is the number of minutes a table is occupied, start to finish — from the moment a party sits down to the moment it's cleared for the next one. On a busy Friday night, shaving even five minutes off your average turn can mean an extra seating for every section, without adding a single chair.
Most restaurants track covers and revenue. Very few track turn time by stage — which is exactly why it's so easy to fix once you look at it properly. Slow turns are almost never one big problem. They're four or five small delays stacked on top of each other.
Where the minutes actually go
Break a table's occupied time into stages and you'll usually find the same pattern:
- Seating to order taken — how long guests sit before anyone takes their order
- Order taken to kitchen start — the gap between an order being written down and the kitchen actually seeing it
- Kitchen start to food served — actual cook and plating time
- Last bite to bill requested — how long guests wait before someone asks if they're done
- Bill requested to payment cleared — the walk to the counter, the change, the card machine
The first, second and last stages are almost entirely about your restaurant's workflow, not your kitchen's speed. That's where the fastest wins are.
1. Cut the gap between order and kitchen
A server writing an order on a pad, walking it to the kitchen, and someone re-keying or shouting it out is minutes of pure delay before cooking has even started. A digital ticket removes that hop entirely — the order lands on the kitchen screen the instant it's confirmed, with modifiers and course notes already attached, so nothing gets lost in translation between the floor and the pass.
2. Make "who's ready to order" visible without a walk-by
Servers checking every table manually to see who's ready is inefficient in both directions — guests wait, and staff waste steps. A live floor view that shows table status (seated, ordered, served, needs bill) at a glance lets a server prioritize the right table without walking the whole room to find it.
3. Don't let payment be the bottleneck
The last leg — bill requested to payment cleared — is where a lot of restaurants quietly lose the most time. The stall is rarely the payment itself. It is the walk to the counter, the search for change, or a guest waiting for someone to notice they want the bill.
Two things shorten it. First, let guests ask for the bill the moment they are ready, instead of catching a server's eye. Second, take payment the way guests actually pay: UPI, card and cash all working from the same bill, with change calculated for you on cash. A bill that is already itemised and ready when the guest asks removes minutes that have nothing to do with your kitchen or your food.
4. Measure it before you fix it
You can't improve what you don't measure. Once orders and bills are digital, per-table timestamps exist automatically — seated, ordered, served, billed. Reviewing that pattern for a week tells you exactly which stage is actually slow at your restaurant, instead of guessing.
What this looks like end to end
In KhaanaPina, the floor view shows live table status so servers always know where to go next, orders route straight to the kitchen display the moment they're confirmed, and guests can ask for the bill with one tap and pay by cash, card or UPI from the same bill. None of it requires a new POS terminal or a hardware overhaul; it runs on the devices your team already carries.
Table turn time isn't about rushing guests. It's about removing the dead time between stages that guests never see and never benefit from — the walk to the kitchen, the wait to be noticed, the fumble at checkout. Fix those, and the table turns faster without anyone at it feeling hurried.
